Mayonnaise
Ingredients
- Squeeze of lemon
- 200 ml grape seed oil
- Yolk of 1 organic egg
- 2 tbsp olive oil
- 1 tsp mustard
- Salt and freshly ground black pepper

Mix the egg yolk, mustard, lemon juice, a little salt and freshly ground black pepper in a bowl.

Gradually add the grape seed oil, whisking constantly, until it is fully incorporated.

When the mixture thickens, add the olive oil and continue whisking vigorously.
Notes
When whisking your mayonnaise, place your bowl on a damp cloth so that it doesn't ‘jump around’ on the table. Serve this lemon-flavoured mayonnaise with cold fish or shellfish.
